A sweet towering treat by our talented pastry chef, Jenna!
Ingredients:
- 1/2 oz. gelatin
- 1/2 cup water
- 3 oz. orange juice
- 12 oz. puréed mango
- 6 egg whites
- 10 oz. sugar
- 1 qt. heavy cream
- puréed mango (topping)
- diced mango (garnish)
Directions:
- Combine water and gelatin and let stand until gelatin softens. Stir over a bowl of warm water until dissolved.
- Heat orange juice and pureed mangos to 85 degrees in a medium pot over stovetop. Add gelatin mixture, remove from heat, and cool to room temperature.
- Whip egg whites and sugar to soft peaks and fold into cooled mango mixture.
- Whip heavy cream to soft peaks and fold into mixture.
- Pipe mixture into tower molds and refrigerate for at least 2 hours.
- Top each tower with a thin layer of puréed mango and garnish with diced mangos.
