A sweet towering treat by our talented pastry chef, Jenna!


Ingredients:

  • 1/2 oz. gelatin
  • 1/2 cup water
  • 3 oz. orange juice
  • 12 oz. puréed mango
  • 6 egg whites
  • 10 oz. sugar
  • 1 qt. heavy cream
  • puréed mango (topping)
  • diced mango (garnish)

 


Directions:

  1. Combine water and gelatin and let stand until gelatin softens. Stir over a bowl of warm water until dissolved.
  2. Heat orange juice and pureed mangos to 85 degrees in a medium pot over stovetop. Add gelatin mixture, remove from heat, and cool to room temperature.
  3. Whip egg whites and sugar to soft peaks and fold into cooled mango mixture.
  4. Whip heavy cream to soft peaks and fold into mixture.
  5. Pipe mixture into tower molds and refrigerate for at least 2 hours.
  6. Top each tower with a thin layer of puréed mango and garnish with diced mangos.
